Spicy Cashew Dressing

Yessa hunted up this delicious recipe for our big dinner of salads with all the assorted mix-ins.
It's shared from the restaurant "Sweet Green" which often enjoy when we visit the Virginia Families.
How to Make 1 Cup of Sweetgreen's Spicy Cashew Salad Dressing
- 2 tablespoons kosher salt
- 1 1/2 tablespoons garlic
- 1 cup cilantro
- 1 tablespoon sesame oil
- 1/2 cup young ginger
- 2 tablespoons rice wine vinegar
- 2 tablespoons maple syrup
- 1 tablespoon red chili flakes
- 1/3 cup + 2 tablespoons cashew butter
- 1 tablespoon lime juice
- Water
Blend it all together, and you're done!
Yessa had a few alterations; Sub garlic and ginger for their dried counterparts and sub cashew butter for cashews and sub chili flakes for gochujang. And no cilantro, of course.
Yessa is a cilantro-avoider, but I say add as much of it as you have.
It was delicious and will be part of the rotation.
