Recipe: Eggless Eggs
Yessa and I cooked and baked up a fair number of food items while she was home over spring break. Several of them were great. Several were okay. One or two will never need to be made again. (Chai latte cheesecake, you had so much potential...)
We did really enjoy these eggs and made them multiple times. The texture and flavor were very much like chicken eggs, and they were easy to make and great on bagels with free shavacado.

We made chickpea flour by grinding up dry chickpeas in the vitamix. Easy peazy, lemon squeezy.
