Recipe: Creamy Sweet Potato and Lentils

Thanks to Jenny for introducing me to this recipe and this website. This is the meal I am having for lunch and dinner all week, and it's delicious.

The Make It Dairy Free recipe author makes cashew cream by simply whirring up cashews and water, but I love the recipe here from Love and Lemons.

I leave out the oil, and it still works great.
