Calico Bean Soup
Calico Bean Soup has a loving history for me. The first time I remember eating it was when Karla, one of the barbers at the Rialto Barber Shop in Newton, Iowa brought it to my parents’ house after my brother David died. She brought a lot of food, and it was given with such loving kindness. I’ve never forgotten that feeling of support.
The recipe from Karla was filled with the comforting symphony of beans, ham, assorted veggies; hearty and soothing.
This recipe drops the animal products, but keeps the soothing, comfort food connection. Plus, lots of leftovers.
